Ingredients
- 75g thin cornstarch or wheat vermicelli noodles, cut into 5cm pieces
- 1 teaspoon tukmaria (basil seeds)
- 2 teaspoons matcha powder
- 2 tablespoons rose syrup
- 480ml milk (whole, almond, oat, or your preferred milk)
- 150g strawberries, hulled and roughly chopped (or blueberries or raspberries)
- Vanilla ice cream, for serving (optional)
Instructions
1. Cook the Vermicelli
Bring 500ml of water to a boil in a small saucepan. Add the vermicelli noodles and cook for about 5 minutes, or until soft. Drain well and set aside to cool.
2. Soak the Basil Seeds
Mix the tukmaria (basil seeds) with 4 tablespoons of water. Let them soak until they swell and become gelatinous.
3. Prepare the Matcha
Whisk the matcha powder with 2 tablespoons of warm water until smooth and free of lumps.
4. Mix the Milk
In a jug, stir together the rose syrup and milk until well combined.
5. Assemble the Falooda
Divide the soaked basil seeds, cooked vermicelli, and chopped strawberries between two large glasses (or four smaller glasses).
Pour the rose-flavored milk over the ingredients, then gently drizzle the whisked matcha on top.
6. Finish & Serve
Top each glass with a scoop of vanilla ice cream, if desired. Serve immediately with a long spoon and straw for the ultimate refreshing dessert drink.
